We at Pillitteri are also committed to innovation. Being located in Niagara-on-the-Lake, Pillitteri is in the perfect climate for ice wine production and has used that to experiment with several grape varietals that had not previously been used in ice wine production. The results have been outstanding, and Pillitteri can boast being one of the few wineries in the world to successfully produce Riesling Icewine, Cabernet Franc Icewine, Shiraz Icewine and Chardonnay Icewine.
  
  We encourage you to come by the winery for a wine tour to gain an appreciation of the extreme conditions that are a major part in the process of making ice wine. Harvest of the ice wine grapes occurs when temperatures have reached -8*C or colder. The grapes have evolved to a beautiful golden colour, and must be hand picked and pressed while naturally frozen to yield a juice with an intense concentration of sugars, acids, flavours and aromas. The yield, however, is far lower than that of most wines, requiring ten times more grapes per bottle. The resulting wine is high in natural sugar, low in alcohol, has an amazing acidity level, and is intensely sweet and flavourful.

  En las Bodegas Rey Fernando de Castilla, situadas en el casco histórico de Jerez, se almacenan verdaderos tesoros de esta famosa región vinícola. Los brandies de la casa, de una suavidad y armonía perfectas, se elaboran con destilados de vinos blancos seleccionados, que inician su proceso de envejecimiento en barricas nuevas de roble francés y americano y lo completan durante un largo periodo en barricas que previamente han contenido vinos de Jerez de gran calidad. Bodegas Rey Fernando de Castilla únicamente produce brandies de las más altas categorías, amparados por el Consejo Regulador del Brandy de Jerez, del que es socio fundador.
