  Registrada como bodega de crianza y expedición en el consejo regulador de la denominación de origen Jerez - Xérès - Sherry.
  
  Nuestra pequeña bodega está situada en el casco antiguo de Jerez (entre la Iglesia de Santiago y la Basílica Nuestra Señora de la Merced). Por su situación, orientación y los materiales con que construyeron sus muros, el microclima en su interior es tan especial que favorece la maduración y crianza del vino.
  
  La consecuencia de todo esto es que poseemos unos vinos de sacristía viejísimos de toda la gama Sherry. Así, todos los años editamos una serie limitada y numerada de botellas que previamente ha sido calificada por el comité de cata del Consejo Regulador como V.O.R.S. (vejez superior a 30 años).
  
  Queremos destacar que nuestra solera de vinos de crianza biológica bajo velo de flor, produce unos finos extraordinarios, todos generosos y distinguidos.

  The \\\"Paolo Pizzorni Vini\\\" firm was born at the beginning of the New Millennium and it carries on the job which Paolo\\\'s grandparents had started in 1929. In that year the great-grandfather Calein bought his first land which he tilled with hard work and dedication. Later on he started producing wines which crossed the Piedmont border and pushed through Liguria, Lombardy and Aosta Valley. Paolo, a young wine entrepreneur, supported by his great passion for the soil and the well-established experience of his father Carlo, vine-grower like the rest of the family, decided to continue his forefathers\\\' job with enthusiasm and innovative ideas. He personally tills the highly suitable vineyards, settled in the wonderful natural landscape of the Acqui hills and dipped in the Monferrato area starting from Moirano d\\\'Acqui and spreading through Alice Bel Colle and Ricaldone at about 300 metres above the sea level and with a low production per hectare.

  We encourage you to come by the winery for a wine tour to gain an appreciation of the extreme conditions that are a major part in the process of making ice wine. Harvest of the ice wine grapes occurs when temperatures have reached -8*C or colder. The grapes have evolved to a beautiful golden colour, and must be hand picked and pressed while naturally frozen to yield a juice with an intense concentration of sugars, acids, flavours and aromas. The yield, however, is far lower than that of most wines, requiring ten times more grapes per bottle. The resulting wine is high in natural sugar, low in alcohol, has an amazing acidity level, and is intensely sweet and flavourful.
